This year, we are hosting several new opportunities (as well as old favorites!) to learn how to preserve your own foods at home. Whether you are a gardener or a patron of Johnston County Farm Markets & Stands, preserving fresh produce is a skill few people still possess that is gaining lots of attention and interest again!

When canning fruits, vegetables, and meats, it is CRITICAL you practice safe, science-based procedures in order to prevent serious, potentially fatal foodborne illness.

We recommend you attend this series in order of events; however, you may pick and choose as each workshop has its own registration and associated fee. 

May 23rd, 2022 (5:45p-7:45p): Intro to Food Preservation

This workshop is great for those who aren’t quite sure of their options. We’ll discuss drying produce and herbs, freezing, and delve into various canning methods. Please note, this is NOT a full canning class. We hope this class will help you determine which future food preservation workshops fit your needs.

Intro to Home Food Preservation. Drying, Freezing & Canning Basics. Friday, May 23rd, 2022. 5:45p.m. - 7:45 p.m. Johnston Ag Center. Not sure what your options are? We'll walk through the three most common methods to preserve foods at home. In an effort to keep the class time short, this will be a demonstration style workshop rather than a hands-on experience for participants.

June 4th, 2022 (10a-1p): Boiling Water Canning: Fruits & Acidic Foods

This workshop focuses solely on using a waterbath canner. Waterbath canning is the simplest way to can, but is only safe to process fruits, fruit products, and acidic foods. Register here! FULL

Boiling Water Canning, Preserving Fruits and Acidic Foods. Saturday, June 4th, 2022, 10 a.m. – 1 p.m. The cost is $15, must register. You'll learn the science behind canning, dicsuss the risks and how to prevent them, and identify safe recipe resources. We will conclude with hands-on canning practice.

June 25th, 2022 (10a-1p): Pressure Canning Vegetables and Meats

This workshop focuses on using a pressure canner. Pressure canners may be a dial or weighted gauge. During this workshop, we’ll use both types of pressure canners to help you decide which you like best and how to properly pressure can low-acid foods (vegetables and meats). Register online using Eventbrite! FULL
